It's a giant armadillo and it's hungry! Looks as if it prefers fast moving semis for a quick snack as opposed to its normal formicivorous diet!
Armadillo is Spanish for "little armored one" and the early Texas German settlers had a name for them too, Panzerschwein which translates to "armored pig."
