This Just In: Inversion Conversion

081907_Inversion.jpgEver since Inversion Coffee House opened its doors this past March fans have been raving about the artsy space, local coffee, and great Houston vibe. Though it may seem like Starbucks is taking over the world (and saving the world), this local dig is a breath of fresh air. Loyal patrons have been screaming for expansion since March. The people have spoken and owner Michael Terrazas has listened. Houstonist has learned that Inversion will be opening a second shop in "West Ave" (the new colossal development going up on Westheimer and Kirby). What makes this news even more exciting is that both Starbucks and Inversion put in a bid for space in the shopping center. After some leasing negotiations, Inversion won the spot and Starbucks will have to settle for claiming space on every other major intersection in Houston and vicinity (and by 'vicinity', we mean the industrialized world). Opening is schedule for summer 2008, but when is construction ever on schedule? Let's hope Mr. Terrazas & Co are able to retain the local flavor of their original shop and not get too watered down in the strip mall scene.

In the meantime, Houstonist has a new favorite caffeinated beverage at Inversion: the iced Toddy. Perfect for a hot summer day, this iced coffee is different from others because it is brewed for 12 hours in cold water. What's the big deal, you say? Just about everything. The cold water cuts the bitterness and acidity that one typically gets in hot brewed coffee. And if it's done right, the aroma is sweet and a tad bit chocolaty. Once you go Toddy, you'll never go back.

Try the Vanilla Bean Chiller at Inversion. It's so good, it makes you feel naughty!

We sell the Toddy where I work. It is also a local company, so that is another bonus.

I would have to argue the semantics of the word brew, which implies boiling or near-boiling water.

I would suggest the drink has been steeped, but that implies warm to near-boiling water as well.

Hmm, perhaps the crushed beans have been soaked? Get me a linguist on the phone.

Will totally try the iced toddy now. Just think, it only takes half the time to get a cup as the drip coffee at cafe artiste. Neat!

Vanilla Bean Chiller? That's the second recommendation I've gotten for that beverage. But the other rec didn't mention the naughty side effect. Sold!

I tried the Toddy tonight. It's a marked improvement over regular Iced Coffee or the obnoxious sounding Cafe Americano. I will add it to my regular beverages for an evening out blogging.

Brew is the appropriate term for iced toddy. It is actually a 12-24 hour cold brew method which entails the ground coffee intermingling with cold filtered water. It turns out a concentrate after the brew time is completed that is much less acidic tasting than iced coffee. It also hs a refrigerated shelf life of up to 14 days.
