<description>&lt;p&gt;Jax, you are so right about the peppers, but I was trying to think about what people could actually get at the store.  I went to Central Market and found everything pretty easily, though I&apos;m sure they have more authentic materials in ethnic grocery stores.  I&apos;ve heard good things about the Amazong Grill&apos;s ceviche, but haven&apos;t checked it out.  I&apos;m still hoping that Lemon Tree will move closer to town!

VLL, I usually let it sit for about half an hour or so for everything to marinate.  A good rule of thumb is to start eating when the fish is completely white (see picture)--if it is still somewhat clear, the lime juice hasn&apos;t finished its job yet!&lt;/p&gt;</description>

<description>&lt;p&gt;I love ceviche, especially the Peruvian kind, but I think the real authentic Peruvian ceviche uses Aji Rocoto (http://en.wikipedia.org/wiki/Rocoto). It might be hard to get rocoto chilies in Houston though.

The Ceviche at Lemon Tree is pretty awesome, my only complaint is its so far away from where I live. :(

There&apos;s a restaurant called &quot;Amazon Grill&quot; that makes something pretty damn close to Peruvian ceviche and it&apos;s inside the loop on Kirby. It isn&apos;t as good as Lemon Tree but it&apos;s close enough to get it whenever I am having a craving for cevichitos.&lt;/p&gt;</description>
