The Central Market Cooking School has a variety of classes from the practical Knife Skills and Seafood 101 to Souffles Galore and those couples cooking classes (Hmmm, two people in one kitchen? Recipe for disaster chez Houstonist).
The January and February classes are listed here. This is an easy resolution to satisfy: get some learning and delectable bites all at the same time.
