Houstonist Cooks: Rotisserie Chicken Salad

In the dead of the Houston summer, the last thing we want to do is crank up the stove to prepare dinner. This time of year we let others slave in the heat of the kitchen for us. Our chicken salad recipe requires no cooking and is perfect served as a stuffing for sandwiches or as a main dish salad. Add some chips and fruit salad, and you've got dinner AND a cool kitchen.

Rotisserie Chicken Salad

1/4 to 1/2 cup walnuts or pecans, coarsely chopped
2-3 ribs of celery, chopped small
1/2 small green apple, chopped small
1 Tablespoon red onion, finely diced
1 rotisserie chicken
1/4 to 1/2 cup lemon mayonnaise, or regular mayo if you can't find it
salt to taste

Mix the nuts, celery, apple and red onion in a large bowl. Remove the meat from the chicken with forks, knives, fingers, whatever gets the job done. Chop the chicken into bit-sized chunks and add to the bowl. Add enough mayo to bind the ingredients together. Go slowly, you can always add more but you can't remove it. If it needs salt add a pinch or two to taste.

This goes great on a nice crusty French Bread with sliced tomato and lettuce. Sit in front of your A/C vent and enjoy.
