Houstonist Cooks: Rotisserie Chicken Salad

In the dead of the Houston summer, the last thing we want to do is crank up the stove to prepare dinner. This time of year we let others slave in the heat of the kitchen for us. Our chicken salad recipe requires no cooking and is perfect served as a stuffing for sandwiches or as a main dish salad. Add some chips and fruit salad, and you've got dinner AND a cool kitchen.

Many of us will be firing up the grill this weekend for the traditional 4th of July fare. If you want to try something a little fancier than the usual hamburgers and hot dogs, we've got just the recipe. These burgers with a surprise in the middle are easy to prepare and can be modified to suit your tastes. We provide you with some combos which you can add to for your own culinary masterpiece.

Houstonist Cooks: Pico De Gallo

Summer is officially tomato season. While you can get less fragrant, anemic-looking specimens in the grocery store year 'round, summer is the best time for those dishes that showcase the love apple. When we think summer, we picture evenings on the patio with a margarita and plenty of chips and pico de gallo. Our favorite pico recipe is quick and easy. We put it on just about everything, from eggs to salads to sandwiches. Take it to your next picnic with plenty of tortilla chips and watch it disappear.

There will be an important football exhibition on television this Sunday afternoon and your friends may want to congregate, eat, drink, yell at the tv set and take in every single new commercial. So, you should really get to making some heavy snacks and such to offer them. Like a cheese log, or ball - however you shape it, and some assorted crackers. Nothing says "I like you people" like cheese! This is simple to put together and can be wrapped tightly in plastic wrap and refrigerated until the afternoon of the game.

As Chinese New Year celebrations bring us the Year of the Ox, you may find yourself wanting to have a celebration of your own, at home. Houstonist has a recipe from Chef Martin Yan, of PBS's "Yan Can Cook" that fits the bill! After all, Tsingtao or Tsingtao Pure Lager should be your beer of choice when hosting your own celebration, why not use them to cook, as well? Houstonist is as aware of the increases at the grocery store as you all are, so we are working on creative ways to stretch our food dollars. Plus, we aren't wild about wasting our leftovers, although, there's only so many meals before that lasagna loses it's luster (freeze individual portions for lunch or another weeknight). We have come up with a great breakfast, or sometimes dinner, option for using our leftovers that is never boring! All you need is a half dozen eggs, some type of cheese, a myriad of stuff you cooked already and a well-seasoned cast iron skillet (or non-stick, oven-proof skillet). Here goes:

As part of our many resolutions made at this time every year, we thought we should get our hands on some tarts -- and luckily, Central Market is there to oblige us.

Okay, okay - this is a no-bake, not from a "box", as creative as you want to be, addition to your holiday party, goody swap or gift.
